I have 13 years experience in the private and charter Yacht industry and 15+ years in the Restaurants industry.

I'Oh you need a recipe using an ingredient that's bountiful around this time of the year or just perfect for the season, than go ahead and try the stewed red Cabbage. The recipe is calling for 2 cups of red wine more or less which is not quite a bottle, but hey no waste while cooking with red wine right?  just make sure some ends up in the food....

 

I added a second recipe because I think the Potato Dumplings are a great companion.

 

The choice of protein is completely up to you to complete the dish
